I’m going to start sharing some recipes here. I cook a lot, probably 75% vegetarian and mostly relatively healthy. These are a quick, simple vegetarian lunch or dinner!
- Saute bell peppers and onions in olive oil until tender (amount is up to you, I make two of these “tacos” at a time so I don’t make much.)
- When they’re tender, put in about a handful of baby spinach (this is optional, I just really like spinach.) Saute that for just a few seconds until the spinach is wilted. Move it all to another plate or bowl.
- In the same pan (unless you feel like getting another pan dirty), heat up your corn tortillas.
- Put the pepper/onion/spinach mixture on the tortillas. Top with cheese and Greek yogurt (great sour cream sub!) or actual sour cream. Roll it up and eat it. Easy peasy and so good!
